Prep Time

Cook Time

Once the pot is preheated, this pot roast will be cooked in the Instant Pot in about an hour. The beef will be cooked in a flavorful red wine and beef broth mixture until it is tender and juicy. The vegetables will be cooked in the same broth and then served with the pot roast.

Ingredients

  • 2-3 pound beef pot roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups beef broth

Instructions

1. Season the beef with salt and pepper and set aside.

2. Heat the olive oil in the Instant Pot using the Saute setting. Add the beef and brown on all sides. Remove the beef and set aside.

3. Add the onion, garlic, celery, and carrots to the pot. Cook until the vegetables are soft, about 5 minutes.

4. Add the tomato paste, oregano, thyme, garlic powder, onion powder, and black pepper. Stir to combine and cook for another minute.

5. Add the beef broth and stir to combine. Place the beef in the pot and lock the lid in place. Set the Instant Pot to manual high pressure for 50 minutes.

6. When the cooking time is complete, allow the pressure to naturally release for 10 minutes and then quick release the remaining pressure.

7. Carefully remove the lid and transfer the beef to a plate. Remove the vegetables from the pot and set aside.

8. Serve the pot roast with the vegetables and sauce.

Notes
