Ingredients

  • 2 lb. top round roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons butter, melted
  • 2 tablespoons cornstarch

Instructions

1. Start by seasoning the top round roast generously with garlic powder, onion powder, oregano, thyme, paprika, pepper, and salt. Make sure to rub the seasoning all over the roast.

2. Turn the Instant Pot to the sauté setting. Once it's hot, add the olive oil. When the oil is hot, add the onion to the pot and cook for about 3 minutes, stirring occasionally. Add the garlic and cook for an additional minute.

3. Place the roast in the pot and sear each side for about 3 minutes. Once the roast is seared, add the beef broth to the pot. Secure the lid, making sure the vent is closed. Turn the Instant Pot to the high pressure setting and set the timer for 20 minutes.

4. When the timer is up, quick release the pressure. Carefully remove the lid and transfer the roast to a cutting board. Let the roast rest for 10 minutes.

5. While the roast is resting, make the gravy. In a small bowl, whisk together the melted butter and cornstarch. Turn the Instant Pot to the sauté setting and add the butter mixture. Cook for about 3 minutes, stirring frequently, until the gravy is thick and bubbly.
