1 tablespoon rice vinegar

2 tablespoons honey

1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

1 cup frozen edamame beans

1/2 cup frozen corn

1/2 cup frozen peas

Salt and pepper, to taste

Instructions

1. Set the Instant Pot to the sauté setting. Add the olive oil and onion and cook for 2 minutes. Add the bell peppers, garlic and ginger and cook for an additional 2 minutes.

2. Add the sesame oil, soy sauce, rice vinegar and honey and stir to combine. Add the chicken and cook for 3 minutes.

3. Add the rice, edamame beans, corn and peas and stir to combine. Season with salt and pepper, to taste.

4. Secure the lid on the Instant Pot and set it to the manual setting. Set the timer for 25 minutes. Once the timer goes off, let the pressure release naturally for 10 minutes.

5. Carefully remove the lid and fluff the rice with a fork. Serve and enjoy!
