Ingredients

For the Adobo:

- 2 lbs chicken thighs, skinless and boneless

- 1/2 cup soy sauce

- 1/2 cup white vinegar

- 8 cloves garlic, minced

- 1 teaspoon whole peppercorns

- 2 bay leaves

- 1 teaspoon sugar

- 1/2 cup water

- 1/4 cup cooking oil

- Salt, to taste



For the Chicken Tinola:

- 2 lbs chicken thighs, skinless and boneless

- 2 tablespoons cooking oil

- 1 large onion, chopped

- 4 cloves garlic, minced

- 2 tablespoons ginger, minced

- 1/2 cup fish sauce

- 1/2 cup chicken broth

- 2 large tomatoes, chopped

- 2 cups spinach, chopped

- 2 tablespoons patis (fish sauce)

- 1 teaspoon pepper

- Salt, to taste

Instructions

For the Adobo:

1. Place the chicken thighs into the Instant Pot and add the soy sauce, vinegar, garlic, peppercorns, bay leaves, sugar, and water. Give it a good stir to combine the ingredients.

2. Secure the lid and set the pressure cooker to high pressure for 10 minutes. When the cooking time is up, allow the pressure to naturally release for 5 minutes, then do a quick release to release any remaining pressure.

3. Carefully remove the lid and transfer the chicken to a plate. Set the Instant Pot to sauté mode and add the cooking oil. Fry the chicken in the oil for a few minutes, until it is golden brown and crispy. Season the chicken with salt, to taste.



For the Chicken Tinola:

1. Set the Instant Pot to sauté mode and add the cooking oil. Fry the chicken in the oil for a few minutes, until it is golden brown and crispy. Remove the chicken from the pot and set aside.

2. Add the onion and garlic to the pot and fry for a few minutes. Add the ginger, fish sauce, chicken broth, tomatoes, spinach, and patis. Give it a stir to combine the ingredients.

3. Place the chicken back into the Instant Pot, secure the lid, and set the pressure cooker to high pressure for 10 minutes. When the cooking time is up, allow the pressure to naturally release for 5 minutes, then do a quick release to release any remaining pressure.

4. Carefully remove the lid and season the tinola with pepper and salt, to taste. Serve and enjoy!
