Nothing beats the smell and taste of homemade tomato sauce! There's nothing more satisfying than being able to make your own from scratch. This instant pot fresh tomato sauce recipe is just the thing for you. It's made with fresh tomatoes, onions, garlic, herbs, and spices for a delicious, flavorful sauce that will make your pasta dishes come alive. This recipe is easy to make and can be made in a fraction of the time it would take to make it on the stovetop.

Prep Time

This delicious tomato sauce can be ready in just 15 minutes. All you need is a few ingredients and your trusty Instant Pot!

Cook Time

Cooking time is 8 minutes on high pressure. After cooking, the Instant pot will naturally release the pressure for 10 minutes.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 pounds fresh Roma tomatoes, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1/4 cup freshly chopped parsley
  • 1/4 cup freshly chopped basil

Instructions

1. Turn your Instant Pot to the sauté setting. Add the olive oil and diced onion and cook until the onion is soft and translucent, about 5 minutes. Add the garlic and stir for 1 minute.

2. Add the diced tomatoes, oregano, basil, black pepper, and salt. Stir to combine, and then cover the pot and lock the lid into place. Turn the valve to sealing, and set the Instant Pot to high pressure for 8 minutes.

3. When the cooking time is complete, carefully turn the valve to release the pressure. Once the pressure is released, carefully open the lid and stir the sauce. Add the parsley and basil, stir to combine, and then serve over your favorite pasta or use it to make a delicious lasagna.

Equipment

  • Instant Pot
  • Wooden spoon

Notes

You can adjust the seasonings to your taste. Feel free to add more oregano, basil, or black pepper to the sauce if you prefer a stronger flavor. You can also use different herbs such as thyme or rosemary for a different flavor profile.

Recipe Tips

The key to making this recipe perfect is to use fresh, ripe tomatoes. You can also use canned tomatoes, but the flavor won't be as robust as using fresh tomatoes. You can also add other vegetables such as bell peppers or mushrooms to the sauce for a heartier flavor.

If you want a thicker sauce, you can cook the sauce on the sauté setting for a few minutes to reduce the liquid. You can also add a tablespoon of tomato paste to thicken the sauce. If the sauce is too acidic, try adding a pinch of sugar to balance out the flavors.

This tomato sauce can be used in a variety of dishes such as lasagna, spaghetti, ravioli, and more. It can also be used as a pizza sauce or to make a delicious soup. You can also freeze it in an air tight container for up to 3 months. Enjoy!
