Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons apple cider vinegar
- Salt to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions
1. Turn your Instant Pot to sauté mode. Add the olive oil and chicken cubes. Cook for 5 minutes, stirring frequently.
2. Add the garlic powder, onion powder, thyme, paprika, and black pepper. Stir to combine.
3. Add the chicken broth, honey, Dijon mustard, and apple cider vinegar. Stir to combine.
4. Put the lid on the Instant Pot and turn the valve to sealing. Cook on high pressure for 10 minutes. When the cooking is done, do a quick release.
5. In a small bowl, mix together the cornstarch and water. Add to the Instant Pot and stir to combine.
6. Turn the Instant Pot to sauté mode and cook for 3-5 minutes, stirring occasionally, until the sauce has thickened.
7. Taste and adjust seasoning with salt, if needed. Serve over rice or with your favorite side dish.
