Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 2 tablespoons sesame seeds (optional)

Instructions:

1. In a medium bowl, whisk together the soy sauce, honey, brown sugar, garlic, ginger, black pepper, and red pepper flakes. Pour the marinade over the chicken and stir to coat. Cover and refrigerate for at least 30 minutes.

2. In a small bowl, whisk together the cornstarch and water. Set aside.

3. Remove the chicken from the marinade and discard the marinade. Place the chicken in the Instant Pot and pour the cornstarch mixture over the chicken. Secure the lid and set the valve to sealing. Select the “Manual” or “Pressure Cook” button and set the time for 8 minutes. When the timer goes off, quick-release the pressure.

4. Remove the chicken from the Instant Pot and shred with two forks. Return the chicken to the Instant Pot and stir in the sesame seeds. Select the “Sauté” button and simmer for 2-3 minutes, stirring occasionally, until the sauce has thickened.

5. Serve the chicken over cooked rice or noodles. Enjoy!
