Ingredients

  • 2 pounds pork shoulder (cubed)
  • 1 onion (diced)
  • 2 bell peppers (diced)
  • 2 cloves garlic (minced)
  • 1 jalapeno (minced)
  • 1 can diced tomatoes (15 ounces)
  • 1 can green chili peppers (4 ounces)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chicken broth or water
  • Chopped cilantro (for garnish)

Instructions

1. Begin by cutting the pork into cubes and dicing the onion, bell peppers and garlic. Mince the jalapeno. Set aside.

2. Add the pork cubes to the Instant Pot and turn it to the sauté setting. Cook for about five minutes, stirring occasionally, until the pork is lightly browned. Add the onion, bell peppers, garlic and jalapeno. Sauté for another three minutes.

3. Add the diced tomatoes, green chili peppers, chili powder, cumin, oregano, salt, black pepper and cayenne pepper. Stir to combine.

4. Pour in the chicken broth or water and stir once more. Secure the lid on the Instant Pot and turn it to the high pressure setting. Cook for 15 minutes.

5. Once the cooking time is up, let the pressure release naturally for 10 minutes. Then quick release the remaining pressure. Remove the lid and stir the chili. Serve with chopped cilantro and warm tortillas, if desired.

Equipment

To make this Instant Pot Pork Green Chili recipe, you'll need an Instant Pot, a cutting board and knife, a spoon for stirring, and measuring spoons.

Notes

Be sure to drain the diced tomatoes before adding them to the Instant Pot. This will help to prevent the chili from becoming too watery.
