Ingredients

  • 1 (2-3 pound) pork loin
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 onion, diced

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • Salt and pepper to taste

Instructions

2. Heat the olive oil in the Instant Pot using the “Sauté” setting. Add the garlic and onion and cook for 3-5 minutes, until the vegetables are softened. Add the pork loin and cook for 2-3 minutes, until it is lightly browned on all sides.

3. Pour the Worcestershire sauce mixture over the pork loin and stir to combine. Secure the lid on the Instant Pot and close the valve. Cook on the “Manual” setting for 30 minutes.

4. When the cooking time is complete, allow the pressure to release naturally for 10 minutes. Carefully open the valve and remove the lid. Use two forks to shred the pork loin into bite-sized pieces.

Pour the Worcestershire sauce mixture over the pork and cover the dish with foil. Bake for 1-1/2 to 2 hours, or until the pork is very tender and shreds easily.
