Cook Time

Ingredients

  • 1 lb. ground beef
  • 1/2 cup bread crumbs
  • 1 egg
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp. Italian seasoning
  • Salt and pepper to taste
  • 1 cup beef broth
  • 2 tbsp. cornstarch

Instructions

1. In a large bowl, combine the ground beef, bread crumbs, egg, onion, garlic, Italian seasoning, salt and pepper.

2. Shape the mixture into 1-inch balls and place in a greased 6-quart Instant Pot.

3. Pour the beef broth over the meatballs and stir to combine.

4. Secure the lid and set the vent to "sealing".

5. Select the "manual" setting and set the time to 5 minutes.

6. When the cooking time is finished, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.

7. In a small bowl, whisk together the cornstarch and 1/3 cup of the cooking liquid from the Instant Pot.

8. Select the "sauté" setting and add the cornstarch mixture to the Instant Pot.

9. Stir until the sauce has thickened and the meatballs are coated. Serve with your favorite sides.

Notes

This recipe can easily be doubled or tripled to feed a larger crowd. The cooking time does not need to be adjusted. The meatballs can also be frozen for up to 3 months in an air-tight container. Defrost overnight in the refrigerator before reheating.

Recipe Tips

If you don’t have an Instant Pot, you can still make this recipe. Cook the meatballs in a skillet over medium heat until browned and cooked through. Then transfer to a baking dish, cover with sauce and bake in a 350°F oven for 15 minutes.
