Ingredients


- 2 tablespoons olive oil
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups beef stock
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Egg noodles or mashed potatoes, for serving

Instructions


1. Select the “Saute” setting on the Instant Pot. When the display reads “hot”, add the olive oil.
2. Add the beef cubes and saute until they are browned on all sides, about 5 minutes. Add the onion, garlic, and bell peppers and sauté for another 5 minutes.
3. Add the beef stock, diced tomatoes, paprika, oregano, thyme, salt, pepper, and bay leaves. Stir to combine.
4. Secure the lid and make sure the pressure release valve is in the sealed position. Select the “Manual” setting and cook at high pressure for 15 minutes.
5. When the cooking is complete, let the pressure release naturally for 10 minutes, then use the quick release to release any remaining pressure.
6. Open the lid and stir in the tomato paste and Worcestershire sauce.
7. In a small bowl, combine the cornstarch and cold water. Add this mixture to the Instant Pot and stir until the sauce thickens.
8. Serve the goulash over egg noodles or mashed potatoes.
