Ingredients
For this delicious pot roast, you will need:
- 2 lbs. beef shoulder roast
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
To begin, season the beef shoulder roast with salt and pepper. Heat the olive oil in the Instant Pot using the saute function. Add the beef shoulder roast, and brown it on all sides. Once the roast is browned, remove it from the pot and set aside.
Add the onion and garlic to the pot, and cook until the onions are softened. Then add the beef broth, Worcestershire sauce, thyme, rosemary, oregano, and any additional salt and pepper. Stir everything together, and then add the beef shoulder roast back to the pot.
Secure the lid on the Instant Pot, and set the pressure release valve to the sealing position. Select the manual/pressure cook setting, and set the cook time for 70 minutes. Once the cook time is complete, allow the pressure to release naturally for 10 minutes, and then carefully do a quick release of any remaining pressure.
Remove the roast from the pot and let it rest for 10 minutes before slicing and serving. Enjoy!
