      Description

      Cook Time

      The Instant Pot will need about 10 minutes to come up to pressure and the chicken will need about 12 minutes to cook.

      Ingredients

      • 2 pounds boneless skinless chicken thighs
      • 1/4 cup low sodium soy sauce
      • 1/4 cup honey
      • 2 tablespoons rice wine vinegar
      • 1 tablespoon grated ginger
      • 2 cloves garlic, minced
      • 1 tablespoon cornstarch
      • 2 tablespoons water
      • Sliced green onions, for garnish

      Instructions

      1. Add the chicken to the Instant Pot and season with salt and pepper.
      2. In a small bowl, whisk together the soy sauce, honey, rice wine vinegar, ginger, and garlic.
      3. Pour the sauce over the chicken and stir to coat.
      4. Secure the lid and set the valve to sealing. Cook on high pressure for 12 minutes.
      5. When the cooking time is up, allow the pressure to release naturally for 10 minutes and then quick release the remaining pressure.
      6. Carefully remove the chicken from the Instant Pot and place it on a plate.
      7. In a small bowl, whisk together the cornstarch and water until smooth.
      8. Select the sauté setting on the Instant Pot and add the cornstarch slurry to the sauce. Simmer for 2-3 minutes, stirring constantly, until the sauce is thickened.
      9. Return the cooked chicken to the Instant Pot and stir to coat with the sauce.
      10. Serve the chicken over rice, topped with green onions. Enjoy!
