Ingredients:



-1 tablespoon olive oil

-1 onion, diced

-2 cloves garlic, minced

-2 cups vegetable broth

-1 cup quinoa

-1 can diced tomatoes

-1 cup chopped carrots

-1 cup chopped celery

-1 teaspoon Italian seasoning

-1/2 teaspoon salt

-1/4 teaspoon pepper

-1/2 cup frozen peas

Instructions:


1. Heat the olive oil in the Instant Pot over medium heat.

2. Add the onion and garlic and cook until softened, about 2 minutes.

3. Add the vegetable broth, quinoa, tomatoes, carrots, celery, Italian seasoning, salt, and pepper.

4. Lock the lid in place and close the pressure valve. Cook on high pressure for 10 minutes.

5. Quick release the pressure and open the lid.

6. Stir in the frozen peas and cook for an additional 5 minutes.
