Ingredients

  • 1 pound beef, cubed
  • 1 onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 2 cups beef stock
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh parsley, chopped
  • 8 ounces egg noodles, cooked
  • 2 tablespoons butter
  • 1/4 cup sour cream

Instructions

1. Begin by turning your Instant Pot on to the Saute setting. Add the cubed beef and onion and cook until the beef is browned. Add the mushrooms and garlic and cook for an additional 2 minutes.

2. Add the flour and Worcestershire sauce and stir to combine. Pour in the beef stock and add the thyme and parsley. Give the mixture a stir and close the lid of the Instant Pot. Make sure the vent is set to “sealing”.

3. Set the Instant Pot to “Manual” for 8 minutes. When the timer goes off, allow the pressure to naturally release for 10 minutes. After 10 minutes, carefully turn the vent to “venting” and release any remaining pressure.

4. When the pressure is released, open the lid of the Instant Pot. Add the cooked egg noodles and butter and stir to combine. Allow the mixture to sit for 5 minutes to thicken. Add the sour cream and stir to combine.

5. Serve the stroganoff with a salad or steamed vegetables and enjoy!

Notes

This recipe can also be made on the stovetop. To do this, simply follow the recipe as directed, but use a large pot instead of the Instant Pot. Then add the remaining ingredients and cook for 15 minutes, or until the mixture is thickened and the noodles are cooked.

Recipe Tips
