  • 1 cup low-sodium chicken broth

  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions

1. Set the Instant Pot to the sauté setting. Add the olive oil, onion, and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes. Add the ground beef and cook, breaking up the meat with a wooden spoon, until it is no longer pink, about 5 minutes.

2. Add the chili powder, cumin, oregano, paprika, and cayenne pepper. Stir to combine and cook for 1 minute. Add the diced tomatoes, black beans, kidney beans, corn, and chicken broth. Stir to combine and season with salt and pepper to taste.

3. Secure the lid on the Instant Pot and set the valve to sealing. Set the Instant Pot to manual/high pressure for 20 minutes. When the cooking time is complete, let the Instant Pot naturally release pressure for 10 minutes, then manually release the remaining pressure.

4. Remove the lid and stir the chili. Taste and adjust seasoning with salt and pepper, if desired. Serve the chili garnished with fresh cilantro.
