Ingredients

  • 2lbs beef chuck, trimmed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 teaspoon smoked paprika
  • 1 tablespoon tomato paste
  • 1 cup Guinness beer
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

1. Turn your Instant Pot to the "saute" setting and heat the olive oil. Add the beef cubes and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until the beef is browned. Remove the beef from the pot and set aside.

2. Add the onion, carrots, celery, garlic, thyme, and smoked paprika to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened. Add the tomato paste and cook for 1 minute more.

3. Add the Guinness beer and stir to deglaze the pot. Add the beef broth, Worcestershire sauce, bay leaf, and beef cubes. Stir to combine.

4. Put the lid on the Instant Pot and turn the valve to "sealing." Cook on high pressure for 25 minutes. Once the cooking time is up, let the pressure release naturally for 10 minutes before opening the lid.
