Keto Instant Pot Butter Chicken

Ingredients
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons ghee (or butter)
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 teaspoon ginger, freshly grated
- 2 tablespoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 (14.5-ounce) can crushed tomatoes
- 1/2 cup heavy cream
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Set your Instant Pot to the sauté mode and melt the ghee or butter.
- Add the onion and garlic and sauté for 2 minutes until fragrant.
- Add the chicken, ginger, garam masala, cumin, coriander, turmeric, cinnamon, cardamom, black pepper, and cayenne pepper. Stir to combine.
- Add the crushed tomatoes and stir to combine. Lock the Instant Pot lid in place and set the valve to sealing.
- Cook on manual high pressure for 10 minutes. When the cooking time is done, let the pressure release naturally for 10 minutes, then release any remaining pressure.
- Carefully open the lid and stir in the heavy cream until combined.
- Taste and adjust seasoning, if necessary. Serve over cauliflower rice or with a side of steamed vegetables.
