Ingredients

  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric
  • 2 cups basmati rice, rinsed and drained
  • 2 cups chicken or vegetable stock
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to the sauté setting and add the oil. Once the oil is hot, add the cubed lamb and cook until browned.
  2. Add the onions and garlic to the pot and cook until softened, about 3 minutes.
  3. Add the spices and stir to combine.
  4. Add the rice, stock, and cilantro and stir to combine.
  5. Secure the lid and set the pressure valve to sealing. Select the Manual or Pressure Cook setting and set the timer for 10 minutes.
  6. Once the timer is done, allow the pressure to release naturally for 10 minutes. Quick release the remaining pressure and open the lid.
  7. Fluff the rice with a fork and season with salt and pepper to taste. Serve and enjoy!

Equipment

You will need an Instant Pot or other pressure cooker for this recipe. You will also need a large pot for cooking the lamb.

Notes

You can use any type of lamb for this recipe, such as cubed leg of lamb or ground lamb. If using ground lamb, be sure to break it up with a wooden spoon while it’s cooking. You can also use a combination of different types of lamb for this recipe.
