Instructions

  1. Turn your Instant Pot to the "Saute" setting and add the olive oil. Once the oil is hot, add the onion and garlic. Saute for 3-4 minutes until the onion is softened.
  2. Add the carrots, celery, lentils, vegetable broth, bay leaves, oregano, thyme, rosemary, and a pinch of salt and pepper. Stir to combine.
  3. Secure the lid and turn the valve to "Sealing". Select the "Manual" setting and set the timer to 15 minutes. When the timer is done, quick release the pressure.
  4. Remove the bay leaves. Taste and adjust seasonings, if desired. If using, add the spinach or kale and stir until wilted.
