- 1 tsp thyme

- Salt and pepper, to taste
- Optional: 2-3 cups spinach or kale
Instructions
- Turn your Instant Pot to the "Saute" setting and add the olive oil. Once the oil is hot, add the onion and garlic. Saute for 3-4 minutes until the onion is softened.
- Add the carrots, celery, lentils, vegetable broth, bay leaves, oregano, thyme, rosemary, and a pinch of salt and pepper. Stir to combine.
- Secure the lid and turn the valve to "Sealing". Select the "Manual" setting and set the timer to 15 minutes. When the timer is done, quick release the pressure.
- Remove the bay leaves. Taste and adjust seasonings, if desired. If using, add the spinach or kale and stir until wilted.
