Prep Time

Cook Time
Once everything is in the Instant Pot, it will take about 5 minutes for the pot to come to pressure. Then the cook time is 8 minutes. After that, you will need to let the pot naturally release pressure for at least 10 minutes before opening it.
Ingredients
- 1/2 pound of pasta (penne, fusilli, or macaroni work great)
- 1 cup of vegetables (we used a mix of carrots, broccoli, and snow peas)
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 3/4 cup of vegetable broth
- 1/4 cup of heavy cream
- 2 tablespoons of grated Parmesan cheese
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
1. Add the olive oil to the Instant Pot and press the "Saute" button. When the oil is hot, add the garlic and sauté for 1 minute.
2. Add the vegetables and sauté until they are lightly browned, about 3 minutes.
3. Add the vegetable broth, pasta, oregano, salt, and pepper. Stir to combine.
4. Secure the lid and set the valve to "Sealing". Select the "Manual" button and set the timer for 8 minutes.
5. When the cook time is complete, let the pot naturally release pressure for 10 minutes.
6. Quick release any remaining pressure and remove the lid.
7. Stir in the heavy cream and Parmesan cheese. Serve warm.
