This Instant Pot pulled chicken is an easy, delicious and versatile recipe that will have your family begging for second helpings. It's a delicious combination of chicken, BBQ sauce and seasonings that tastes amazing when served with rice and veggies, on a salad, in tacos, sandwiches, and more. The best part is that it's made in the Instant Pot, so you can have it ready in no time!

Ingredients

2 lbs boneless, skinless chicken breasts

1 cup of your favorite BBQ sauce

1/4 cup chicken broth

2 tablespoons of your favorite seasoning (I used a combination of garlic powder, chili powder, smoked paprika, and brown sugar)

1 tablespoon olive oil

Salt and pepper to taste

Instructions

1. Place the chicken breasts in the Instant Pot and season with salt and pepper.

2. Pour the BBQ sauce, chicken broth, and seasoning over the chicken and stir to combine.

3. Secure the lid and set the valve to sealing. Select the “Manual” setting and adjust the cooking time to 10 minutes.

4. When the cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to venting to release the remaining pressure.

5. Carefully remove the lid and use two forks to shred the chicken.

6. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-10 minutes, stirring often, until the chicken is heated through and slightly crisp.

7. Serve with your favorite sides, or in tacos, sandwiches, salads, and more.

You can use your favorite BBQ sauce for this recipe. I like to use a combination of my favorite store-bought sauce and my own homemade sauce. For extra flavor, try adding a splash of apple cider vinegar.
