This stew is pure comfort food and an easy one-pot meal. It’s the perfect recipe to make on a cool day. Serve it with a loaf of crusty bread and enjoy a cozy meal with your family.

Prep Time

This Instant Pot chicken stew takes about 10 minutes to prepare. You’ll need to gather all the ingredients and have everything prepped and ready to go. You can also prepare the ingredients in advance if you’re short on time.

Cook Time

This Instant Pot chicken stew takes about 15 minutes to cook. The pressure cooker does most of the work for you, so all you have to do is set it and forget it. The stew is done when the chicken is cooked through and the potatoes are tender.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon dried thyme
  • 2 cups chicken broth
  • 2 large carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 large potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

Set the Instant Pot to the sauté setting. Heat the olive oil and add the onion and garlic. Cook until the onions are softened and fragrant, about 5 minutes. Add the chicken, thyme, chicken broth, carrots, celery, potatoes, salt, and pepper. Stir to combine. Close the lid and set the Instant Pot to the stew setting for 15 minutes. Once the timer goes off, let the pressure release naturally for 10 minutes, then manually release the remaining pressure.

When the pressure has released, open the lid and stir in the parsley. Taste and adjust the seasoning if needed. Serve the stew warm with crusty bread.

Recipe Tips

For extra flavor, add a bay leaf to the stew while it’s cooking. You can also add a teaspoon of Worcestershire sauce for a smoky flavor. If you want a thicker stew, you can stir in a tablespoon of cornstarch during the last few minutes of cooking.

This Instant Pot chicken stew is a hearty and comforting meal that’s sure to please. The best part is that it’s easy to make and can be customized to your tastes. Serve it with a loaf of crusty bread and enjoy a cozy dinner with your family.
