Ingredients

  • 1 lb. white fish fillets
  • 1 cup long grain white rice
  • 1 cup vegetable broth
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Rinse off the fish fillets and pat dry.
  2. Put the rice and vegetable broth into the Instant Pot and stir.
  3. Place the fish fillets on top of the rice and season with garlic powder, onion powder, basil, salt and pepper.
  4. Place the lid on the Instant Pot and turn the valve to “sealing”.
  5. Set the Instant Pot to “manual” for 10 minutes.
  6. Once the cooking time is complete, let the pressure release naturally for 10 minutes and then turn the valve to “venting” to release any remaining pressure.
  7. Once the pressure has been released, open the lid of the Instant Pot and flake the fish.
  8. Stir the fish and rice together and season with additional salt and pepper to taste.
