  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons all-purpose flour
  • 1/2 cup heavy cream

Instructions

1. Heat the olive oil in the Instant Pot on the sauté setting. Add the onion and garlic and cook, stirring, for 2 minutes. Add the ham and cook, stirring, for 2 minutes. Add the potatoes, carrots and celery and stir to combine.

2. Pour in the chicken broth and stir in the thyme, salt and pepper. Secure the lid and set the pressure release valve to the sealed position. Cook on high pressure for 15 minutes. Allow the pressure to naturally release for 10 minutes, then carefully release any remaining pressure.

3. Stir in the parsley, then whisk together the flour and cream in a small bowl and stir into the soup. Cook on the sauté setting, stirring constantly, until the soup is thickened, about 5 minutes.

4. Serve the soup hot with a sprinkle of parsley, if desired.
