Ingredients


• 2 lbs plums, pitted and roughly chopped

• 2 tablespoons lemon juice

• ½ cup granulated sugar

• 2 tablespoons honey

• 2 tablespoons chia seeds

• 1 teaspoon ground cinnamon

• ¼ teaspoon nutmeg

Instructions

1. Place the chopped plums into the Instant Pot and add the lemon juice, sugar, honey, chia seeds, cinnamon, and nutmeg. Give it a good stir so that everything is evenly combined.

2. Place the lid on the Instant Pot and set the valve to sealing. Press the manual or pressure cook button and set the timer to 10 minutes. When the timer goes off, let the pressure release naturally for 10 minutes before quick releasing the remaining pressure.

3. Open the lid and give the jam a stir. If it looks a bit thin, you can turn the instant pot to the sauté setting and let it simmer for a few minutes until it reaches your desired consistency.

4. Once the jam is ready, let it cool slightly and then transfer it to a jar. It will keep in the fridge for up to 1 month.
